Robert Budd, Sous Chef at Surrey meeting venue, Barnett Hill, has won the 2014 UK Copper Skillet Competition run by the International Association of Conference Centres (IACC).

On 25th January, Budd battled it out in a ‘cook off' final at the Royal College of Physicians in London to become IACC's UK National Champion. The five finalists were given the challenge to produce a single dish from a mystery basket of ingredients comprising fresh produce, grains and three proteins.

Budd's winning dish was paprika seared monkfish with sweet potato fondant, fondue of tomato, cannellini beans, chorizo and basil, finished with pine kernels and olive oil.

The Copper Skillet Competition recognises the vital role that food service plays in conference centre operations and highlights the artistry and skills of IACC member conference centre chefs around the world.

This is the third time a Sundial Group chef has been awarded the title, with Iain Miller, Head Chef at Woodside, previously winning the competition in 2013 and Lee Gaskins, Head Chef at Highgate House, also winning in 2007.

Budd first joined Barnett Hill in August 2006 in a temporary capacity whilst he was a student at university. Upon joining full time, he has graduated from kitchen porter, to senior Chef de Partie, to his current position of Sous Chef. He will go on to represent the UK and compete in IACC's prestigious Global Copper Skillet competition in Los Angeles, California, between the 18th to the 21st March, 2014.
